ROASTED ONIONS

2 Pounds onions sliced
Salt and pepper to taste
1/3 c olive oil
2 bay leaves
1 tsp fennel or celery seeds, ground
¼ c vinegar, lime or lemon juice

Preheat oven to 350. Place ingredients (except vinegar) in a lightly greased pan, and drizzle with oil. Stir and roast for 45-60 minutes or until onions are tender. Add vinegar, stir and bake another 2 minutes.

Variations:

Add 2 tbsp honey blended with tsp mustard

Toss in any one or more of the following:
¼ c pine nuts
½ c olives
½ c fresh sliced mushrooms
6 cloves garlic
1 fresh fennel bulb
