OVEN BAKED GARLIC

Trim the top off a garlic bulb to expose the top of each clove. If necessary, trim the bottom so that the bulb lies flat on a terra cotta tray or small coverable casserole dish.

Discard any loose paper (skin) and puncture the cloves lightly with a fork or thin skewer. Sprinkle each bulb with olive oil (about 1/2 tsp per bulb) and add seasonings to taste.  Seasoning may be herbs de Provence, basil or whatever pleases the chef.

Tightly cover the garlic bulbs and bake at 300 F for 60-75 minutes. Baste several times during the baking process with the juices that form. Bulb will be very tender when done.

Delicious warm as a spread, squeezed onto a pizza, or cool it down and be creative with canapés. 

Note: Not quite as tasty but quicker - can be done in a microwave at full power for about 60-75 seconds.
