This rich sauce is a garlic lover's dream. In addition to complementing fish, it may be used on cooked vegetables, toast points, bruschetta or pasta.
1 cup walnuts, toasted and chopped
3/4 cup Italian parsley, chopped
2 garlic cloves, finely minced
3 hard cooked egg yolks, chopped
1cup extra virgin olive oil
Salt and fresh ground pepper to taste
4 tbsp Mediterranean style black olives, chopped (optional)
1 tbsp capers, rinsed and chopped (optional)
Combine all ingredients in a bowl and whisk to mix well. Yields about 2 cups.
