RED ONION AND PAPAYA SALSA

1 clove garlic, crushed
1 tsp chili powder
1/2 tsp cumin
1 medium red onion, thinly sliced
1/4 tsp mashed green peppercorns
1 medium ripe papaya, sliced
2 red tomatoes, sliced
1 tbsp chopped fresh basil
2 tbsp olive oil
1/4 tsp balsamic vinegar
Salt and black pepper to taste

Over low heat, sweat the sliced onions in a little olive oil. Add the garlic, herbs and peppercorns and continue to cook for 1 minute. 

Remove from heat and add the remaining ingredients. Toss well and serve at room temperature.
