medium size summer tomatoes such as Marvel Stripe or Beefsteak
4 balls of fresh mozzarella cheese
1 cup of Sweet 100 cherry tomatoes
2 green-striped Zebra tomatoes
4 heirloom plum tomatoes (yellow, purple or peach colored)
Extra virgin olive oil
Salt & pepper
4 whole basil leaves
Slice summer tomatoes into 6 slices each. Slice fresh mozzarella to equal 12 slices total. Cut Sweet 100 tomatoes in half if they are not very tiny, otherwise leave whole. Cut Zebra tomatoes and plum tomatoes into wedges. Drizzle with extra virgin olive oil, salt and pepper. On four salad plates, layer 3 slices of summer tomatoes with 3 slices of fresh mozzarella. Scatter cut tomatoes and Sweet cherry tomatoes around the plate. Drizzle the salad with balsamic syrup. Place droplets of Basil Oil around the plate. Garnish each with a basil leaf.
Reduce 1 cup balsamic vinegar by 1/2 or until a syrupy consistency is obtained.
Pick the leaves off of the bunch of basil. Blanch in boiling water for 10
seconds. Drain and squeeze dry. Place in a blender with the olive oil and blend until smooth. Strain through a fine sieve.
