SPICY CITRUS TABBOULEH

1 c couscous
1 c boiling water
4 garlic cloves, chopped
1-2 tsp ground red chile
½-1 tsp ground cumin
2 green onions, thinly sliced
½ jalapeno chile, seeded and chopped
3-4 tbsp chopped cilantro
Juice of 1 lemon and 1 orange (or to taste)
2 tbsp olive oil
Salt and pepper to taste

Place couscous in a bowl and pour the boiling water over it. Cover and let sit for 5-10 minutes (until tender). Mix remaining ingredients, taste for seasoning. Refrigerate if made ahead. Bring to room temperature before using, Serves 4
