1 c bulgur
4 Tbsp chopped flat leaf parsley
2 Tbsp chopped mint 
1 cucumber, diced
1 onion and 6 scallions, diced
1 large tomato, diced
Grated rind of 1 lemon
Juice of 2 lemons
1/3 c olive oil
Salt and pepper
Pinch of ground allspice

Soak bulgur in cold water to 30 min, and then drain in a fine sieve, squeezing out the excess moisture. Combine all ingredients, toss together and chill at least 1 hour before serving. Serves 5-6.
