RICE AND CHICKEN SALAD

1 c rice and water to cook rice
2 c cubed cooked chicken
1 small can of mandarin orange segments
½ c sliced celery
2 thinly sliced scallions
1 tsp coarsely grated orange peel

Cook rice, rinse in hot water and drain well. Combine basic garlic vinaigrette with ½ c mayonnaise and 1 tbsp of soy sauce. Toss rice in dressing. Add other ingredients and toss lightly. Serve on lettuce leaves. Makes about 6 cups and serves 4-6
