Lamb Chops Malay Style

8 lamb chops (cut from a rack), frenched 

1 teaspoon cardamom pods 
1 teaspoon sesame seeds, toasted 
1/2-inch piece Cassia stick (Chinese cinnamon) 
1 clove 
1 teaspoon cumin seeds 
1/2 teaspoon cayenne pepper 
1/2 teaspoon nutmeg 
2 tablespoons peanut oil 

1 tablespoon sweet soy sauce and 2 tablespoons macadamia nuts (toasted and crushed) for garnish 

Lightly toast the spices in a dry pan until fragrant and grind in a coffee grinder until fine. Mix the spices into the peanut oil. Heat a grill pan until smoking. Dip each chop into the marinade and cook until medium rare, about 2 to 3 minutes per side, remove to a warmed plate and drizzle each chop with soy, sprinkle with the crushed nuts. Serves 2.
