TURKEY CASSOULET
1 lb dried white beans
1 turkey drumstick, smoked or fresh
2 onions, peeled and quartered
2 cloves garlic, mashed
¼ c chopped parsley
5 or 6 fresh or 1 tsp dried basil leaves
3 to 4 bay leaves
1 tsp dried thyme
Salt and pepper
1.5 c tomato juice
5 tbsp breadcrumbs mixed with 2 tbsp chopped parsley
Let beans stand in cold water overnight, rinse and discards duds.
Combine beans with turkey drumstick and seasonings, add 1 c water, cover and bake at 350 for 1-2 hours (until drumstick is tender). Remove and discard bay leaves, turkey skin and bones. Stir in tomato juice.
Place in large casserole dish, sprinkle top with breadcrumb mixture.
Bake (uncovered) at 425 degrees for 30 minutes (until top is browned).
