BLACKBERRY COMPOTE

2 tart apples such as Granny Smith, cut into 1/3-inch dice
1 c brandy
1/4 c sugar
4 c blackberries, halved lengthwise
1 tb unsalted butter
1 ts thinly sliced fresh mint (optional)

Bring apples, brandy, and sugar to a boil in a heavy saucepan, stirring,  boil until liquid is reduced to about 1/4 cup, then stir in blackberries and remove from heat. 

This was originally used as a sauce for game meats, just reheat the compote and stir in the butter and mint at the last minute.  Better yet, use it as a tart or pie filling - quickie individual tarts made from wonton wrappers, etc.
