APPLE MAPLE TURNOVERS

1 ½ c unsifted all purpose flour
½ tsp sugar
½ tsp salt
4 oz unsalted butter cut into ¼" slices
2 tbsp solid vegetable shortening
9-11 tbsp ice water

Combine dry ingredients, cut in butter, cut in shortening, and sprinkle in water 1 tbsp at a time until dough holds together. Flatten slightly, wrap in plastic and refrigerate for at least 1 hour.

2 large Golden Delicious apples, peeled, cored, chopped into ½" pieces
¼ cup pure maple syrup
¼ cup water
½ of a vanilla bean

Combine in a skillet, cook over medium heat until apples are tender for 
about 10-15 minutes or until 2 tsp of syrup remains. Remove vanilla bean and let cool.

Preheat oven to 425, and adjust rack to lower third. Place the dough on a lightly floured work surface and roll out into an 18.5X14 rectangle. Cut out 12 (4.5") pastry squares. Place 3 dough squares 2" apart on 
parchment covered baking sheet. Spoon 1 tbsp filling just off center of each square. Lightly brush edges with water, fold over and seal edges with pastry crimper or fork tines. Cut a small slit on top of each. Bake 10 minutes at 400 degrees until golden brown.

Glaze: Combine powdered sugar and maple syrup, stir until smooth and brush over turnovers while still warm. Makes 12
